Shroof Chocolate Zucchini Bread

Chocolate, Shroof, and Bread. Amazing. We love Shroof, chocolate and bread, so we decided to put them all together to concoct this amazing dessert. Enjoy!

Ingredients:

3 tablespoons Shroof

¾ cup all-purpose flour

¼ cup cocoa powder

1 teaspoon baking powder

½ teaspoon baking soda

Pinch of salt

1 egg

¼ cup applesauce

¼ cup plain yogurt (Shroof Mascot Benji used plain Greek yogurt)

½ cup brown sugar

1 cup grated zucchini

¾ cup chocolate chips


Instructions:

Preheat oven to 375 degrees.  

Spray a loaf pan with cooking spray.  

In a large bowl, mix flour, cocoa powder, Shroof, baking powder, baking soda and salt.  

In a separate bowl, whisk eggs, applesauce, yogurt and brown sugar.  Add zucchini. 

Mix the wet ingredients into the dry ingredients, add ½ chocolate chips and reserve the remaining ¼ cup for the top.  

Pour into a pan and sprinkle remaining chocolate chips on the top.  

Bake for 35-45 minutes or until a toothpick comes out clean.
